Tired of the same old #MeatlessMonday recipes? I know I have been looking to change up my typical meatless meals for a while. So when I came across this Vegetable Bean Tostada recipe, I knew I had to try it out.  With its simple ingredients and light prep, I had this flavorful and healthy tostada on the table in 20 minutes.  If you’re like me and want to try a new meat-free dish, then this recipe is for you.  

Vegetable TostadaI’m telling you there is nothing not to love about this meatless meal.  It’s packed with flavor, low in fat and calories.   The other great thing about this vegetable tostada recipe is even if you have to get the ingredients, it’s a one stop shop kinda meal.  The bulk of ingredients are in your produce section and the remaining ingredients can be found in the dairy section. By the time you read the recipe, stop at the grocery store and get home to cook you can feasibly have this meal done in an hour.  Otherwise with all the ingredients on hand, you’re talking 20 minutes and done.

Are you ready to give this meat-free tostada a try?  Of course you are….. so I’m gonna  stop talking so you can start cookin’:

To get started on these tostadas the first thing you should do is heat up a large skillet with cooking spray over medium heat and cook the tortillas for about 30 seconds per side.  Then set aside and keep warm.  In the same pan you’ll need to add a touch of vegetable oil (like tsp. or so) and saute your mushrooms and slaw until tender. This will take about 5 minutes.

Vegetable Tostadas

Set aside the vegetables and then warm up the refried beans for a few minutes on until completely warmed through.  Then spread the beans mixture over the warm tortillas.  Place in a deep dish to create a bowl effect.  Top each tortilla with the vegetable mixture, chopped tomatoes, avocado, cheese, sour cream, scallions and cilantro.  The recipe should yield 4 tostadas.

  • 1 cup Sliced White Mushrooms
  • 2 cups Shredded California Slaw or similar
  • 1 can of Vegetarian Refried Bean - 14oz, spicy optional
  • 1 Cup Fresh Tomato;chopped
  • 1 Whole Avocado;chopped
  • 4 Tblsp. Shredded Mexican Cheese optional low fat
  • 4 Tblsp. Sour Cream
  • 1 tsp. vegetable oil
  • non-stick cooking spray
  • Chopped Scallions and Cilantro for garnish

Instructions
  1. Heat up a large skillet with cooking spray over medium heat and cook tortillas for about 30 seconds per side;set aside and keep warm.
  2. In the same pan add vegetable oil and saute mushrooms and slaw until tender - for about 5 minutes. Set aside and keep warm
  3. Warm refried beans for 2 minutes (or until heated through). Spread the refried beans over each tortilla. Then evenly top each tortilla with the vegetables, tomato, avocado, cheese, sour cream, scallion and cilantro.
  4. Then serve.
Recipe Notes

Alternative to Shredded California Slaw:
1 cup chopped broccoli
1 cup shredded carrots
