Do you keep a well stocked pantry with your favorite go to items for last minute meals or unexpected guests?  I think by now y’all know I am huge fan of a well stocked pantry.  Among the items that I always keep on hand are Marinated artichoke hearts. I keep them in my pantry because they can be used in so many different ways.  In addition to antipasto platters, I add artichoke hearts to chicken dishes, dips and even frittatas.  I find them to be an extremely versatile pantry staple.


I especially love Italian Artichokes that are preserved in oil.  They can add instant flavor to just about any dish and the juices can also be used for salad dressings or for marinating your favorite meats and vegetables.

Artichoke Hearts Parmesan

One dish that I love to make with whole artichoke hearts marinated in olive oil is broiled artichokes with parmesan cheese and bread crumbs. Kinda like a Broiled Artichoke Parmesan,  This artichoke parmesan is perfect for antipasto, appetizers or side dishes.

To prepare the artichokes you first need to remove them from the jar without the oil, slice them in half, and place them cut side up on a baking sheet.  Then combine some grated parmesan cheese and a few tablespoons of breadcrumbs in a bowl and sprinkle over the tops.  Next all you do is place the artichoke hearts under the broiler until they are golden brown and bubbly.  

NOTE: keep the artichokes a good 6″ from the broiler to prevent burning.

About halfway through (about 3-4 minutes later – I like to spoon a little reserved juice over the tops and then continue to broil.  Remove from the broiler when done and serve with some fresh lemon wedges if desired. 

These artichoke parmesan hearts are just another reason to always keep a few standard items on hand in your kitchen pantry.  With a well stocked pantry you will always have a great dish at your fingertips. And in this case, a quick one too!

Artichoke Parmesan

Parmesan Broiled Artichokes

Ingredients
  

  • 8 in artichoke heart halves marinatedolive oil
  • Juice from 1 lemon
  • 1/4 cup reserved juice from the marinade
  • 1-2 cup Tblsp.breadcrumbs
  • 1/4 cup of grated Parmesan cheese

Instructions
 

  • Mix together breadcrumbs and grated Parmesan cheese and set aside. Preheat broiler. Lay artichokes cut side up on a baking sheet. Sprinkle each artichoke with the Parmesan Cheese-Bread Crumb mixture. Place under broiler and toast until browned and melty.
  • Serve on a platter with cut lemon wedges.

Notes

Keep broiler pan in the middle of the oven rack if possible to prevent burning.
