IMG_3813Oops!  I forgot to post my recipe yesterday in tribute to National Pecan Day!  Honestly, with no pun intended, and out of shear coincidence, the recipe is for a Forgotten Cookie! 

It’s called a forgotten cookie because you place it into a pre-heated oven either at the start of the day or the end of the day and literally forget about it. 

NOTE: you do not leave the oven on all day or night you pre-heat then turn off once cookies are placed inside.

Simply a meringue cookie (egg whites and sugar) with your choice of chocolate, nuts, and/or coconut.  I opted for all three and while it’s not the most attractive looking cookie it is actually really yummy!

First,I chopped the nuts:IMG_3801

Then, I separated the egg whites into a mixing bowl, added the salt and beat until they formed soft peaks:

 Then I added the sugar (1/3 sugar at a time) and added the vanilla. I continued beating to stiff peaks. 

IMG_3808Next, I folded in the remaining ingredients and dropped by the spoonful onto lined cookie sheets:

I used foil but parchment will work the same

Once I placed trays in the oven I closed the door and shut off the heat.  The cookies remained in the oven – I did not open the door from about 10:00pm until about 8:00Am the next day.  Next morning I opened the oven door and voila….

I gently removed with a spatula and plated them..

Instructions
  1. Pre-heat oven to 350 degrees farenheit
  2. Chop nuts
  3. Beat egg whites and salt to soft peaks
  4. gradually add the sugar and vanilla and beat to stiff peaks
  5. fold in remaining ingredients
  6. place spoonful of cookie dough onto lined baking sheets
  7. they will spread a little so keep at least 1" apart
  8. Place tray into pre-heated oven, close the door and turn off the oven.
  9. Leave cookies in oven for at least 6 hours (or overnight)
  10. remove cookies gently with a spatula and transfer to a serving tray
Recipe Notes

You can have fun with these by adding food coloring
Chop the ingredients small and add batter to a pastry bag and pipe out with a star tip for a prettier look
If omitting one ingredient (like coconut, for example) be sure to increase the amounts in the other fillings.
