A few weeks ago, on World Nutella Day, I posted a recipe for flour less Nutella Thins.  Due to some technical issues the recipe and post are no longer retrievable. I am sorry for the inconvenience! So your not seeing double- this is a re-post (not a repeat) of that recipe…thanks!


This recipe is so easy that you might want to stop and check your supplies because in less than 20 minutes you can literally produce this deliciously simple cookie.

Finding a jar of Nutella in my house is not usually that hard to do. Finding an unopened jar might be a little more difficult.  Admittedly, we may have a bit of a Nutella addiction in my house.  Well, addiction might be too strong a word, lets just say – without pointing any fingers at my husband or kids – some of us are slightly obsessed with this chocolate hazelnut spread.

Needless to say, this cookie was a hit around these parts….

Here’s all you need to do:

First, pre-heat your oven. Then add the ingredients to your stand mixer: A cup of  nutella, 3/4 cups of sugar, an egg and vanilla extract. Once all mixed together take a standard sized teaspoon and measure out about a 1/4 of a teaspoonful of dough, roll into a ball and place it on a lined cookie sheet.

Tip: Not too close they really spread – keep them at least 2″ apart on the sheet.

Let them cool before removing them from the baking sheet – this is very important or they will fall apart.  You can dunk these or make ice cream cookie sandwiches with them. I even spread nutella in between to make nutella cookie sandwiches.  We like them for dunking.  If you experiment with these please let me know!

Gluten Free Nutella Cookie

Nutella Thin Cookies

Flour-less cookie made with nutella, sugar, egg and vanilla extract.
Prep Time 5 minutes
Cook Time 6 minutes
Total Time 11 minutes

Ingredients
  

  • 1 cup of Nutella hazelnut spread
  • 3/4 cup of sugar
  • 1 egg
  • 1 tsp vanilla extract

Instructions
 

  • Mix all the ingredients together in a bowl.
  • Pre-heat oven to 350 degrees
  • Line 2 baking sheets with parchment paper. Roll small balls of dough and place on the cookie sheets at least 2" apart. Bake in the oven for about 6 minutes or until done.
  • Let cookies cool completely before removing from the baking sheet.

Notes

You can enjoy these cookies alone or you can make sandwich cookies out of them with buttercream, ice cream or even more nutella.
