It’s that time of year … Tomato Time!  With gardens about to overflow with every type of tomato you can think of… I thought it would be the perfect time to round up some of my favorite ways to incorporate tomatoes into your weekly meal plan. I mean let’s face it, I’ve never met a tomato I didn’t like!

 So whether you say “tomato” or “tomahto” here are a few faves of mine.

MONDAY

 Summer Stuffed Portobellos

TUESDAY

Bucatini with Fresh Pomodoro Sauce

This pomodoro sauce takes the flavors of my favorite San marzano sauce to the next level by incorporating a pound of fresh tomatoes with a touch of cream.  Perfect for summer when tomatoes and basil are at the peak.

Pan Seared Panko Breaded Shrimp

Make this winning shrimp dish with just a few ingredients and in like 20 minutes!

THURSDAY

Quick Chicken Cacciatore 

An all time favorite here in our house! Give this dish some a summer makeover by swapping in some fresh tomatoes instead of canned peeled tomatoes.

Focaccia Barese

Make this cast iron skillet focaccia with fresh or canned cherry tomatoes and you’ll have the perfect Friday Night Dinner!
