Mix the first 10 ingredients in a stand mixer or blender. Heat an 8" skillet and spray with cooking spray. Pour about 1/4 cup of batter into the the skillet. Coat pan with butter/cooking spray.
Pour enough batter in the pan to thinly coat the bottom, Swirl the pan around to spread out the batter. After about 30 - 40 seconds (or when the edges of the crepe are curling up) flip the crepe over and continue to cook another 10 seconds. Stack the crepes and cover with paper to keep warm
Spread a tablespoon of Nutella (or your favorite spread) on the crepe the fold into 3 and top with powdered sugar and freshly cut strawberries
