Ingredients

Large Heirloom tomatoes
2
medium zucchini
3-4
tablespoons
of olive oil
1/4
cup
of fresh tomato sauce with basil and garlic
1/4
cup
plain breadcrumbs
1/4
grated parmesan cheese
1/4
cup
shredded mozzarella cheese
1
tablespoon
of fresh chopped basil
Salt and pepper to taste
Instructions
Pre- heat oven to 350 degrees F
Slice the tomatoes and Zucchini about 1/4" thick.
In a deep skillet heat olive oil and then begin to layer the sliced tomatoes in the pan
Lightyly season the tomatoes and cook for minutes on medium/high heat
Begin to layer the zucchini around the pan
Add the sauce and spread out over the zucchini
Mix together bread crumbs,basil and cheeses, and sprinkle over zucchini
Place in a preheated oven and bake for 20-25 minutes, or until bubbly and lightly brown
Serve and enjoy
