Italian Garden Pork Chops
Thin boneless cut pork chop with italian flavored stewed tomatoes

Boneless Center Cut Pork Chops - THIN

tablespoons
of olive oil
2
cloves
crushed garlic
1
small yellow onion diced
1 14
oz
can of Kirkland Italian stewed tomatoes
or like flavors
1/4
cup
lemon juice
1/4
cup
chicken stock
Instructions
Season chops with salt and pepper
Saute in hot pan with olive oil - sear on both sides for 3 minutes each side
Remove pork chops from pan and set aside
Saute onion and garlic for another 3 minutes
add chicken stock and lemon juice, scarping up the bits from the bottom of the pan
After bringing to a simmer (about 2 minutes) add the tomatoes
Crush tomatoes with a masher if you like
Return pork chops back to pan and simmer in the pan for about 5 minutes (or until cooked)
Serve over rice or pasta
Notes
You could subsitute thin chicken breasts
