Italian Green Bean and Tomato Salad


  • 12 oz Green Beans/String Beans
  • 1/2 small white or red onion sliced thinly
  • 6 Campari Tomatoes quartered
  • 1 tsp dried oregano
  • Pinch garlic salt
  • Pinch pepper
  • 3-4 Tblsp. Organic Extra Virgin Olive Oil
  • 1/4 cup White Balsamic Vinegar


  • Par boil the string beans until cooked but still firm. Let them cool.
  • In a bowl combine cooled green beans, sliced onions, tomatoes, seasonings, olive oil and vinegar. Mix all together and let sit for a few hours or overnight.
