8ozof small pasta (like ditalinismall shells, etc..)
1small shallotdiced
2Tblsp. unsalted butter
1Tblsp. EVOO
1 1/2cupsfrozen peas
1/4cupof grated Parmesan/Romano Cheesemore/less if you like
Salt & Pepper to taste
2cupsreserved pasta water
Instructions
Cook pasta in plenty of salted boiling water.
Saute shallots in butter and olive oil on medium heat for 2-3 minutes. Add the peas and continue to saute for an additional 5 minutes. Add the cooked and drained pasta along with 1 cup of the reserved water. Add the cheese along with more liquid if too dry (1/4 cup at a time). Serve warm with more grated cheese and cracked black pepper.
Notes
*keep in mind the water will give the dish added flavor so use salt generously
