Crunchy Asparagus

Ingredients
  

  • 1 bunch of asparagus spears
  • 2 cups flavored bread crumbs
  • 3 eggs
  • 3 tbsp. grated parmesan cheese
  • 1/4 cup olive oil plus extra to drizzle

Instructions
 

  • Wash and snap asparagus. In one dish mix eggs and parmesan cheese together to create an egg wash. Put breadcrumbs into another deep dish. Dip each asparagus spear into the egg and then coat with breadcrumb. Lay the asparagus onto a baking dish coated with olive oil. Place te asparagus into a preheated 400 degree F oven. Bake for 20 minutes or until golden brown and crispy. You can turn the spears around at the halfway mark. Sprinkle with more grated parmesan and serve warm.
