8ozof fine cookie crumbs for crust (vanilla wafersoreos, grahm crackers, etc..)
1 3ozpackage of Cherry Jello
1cupCherry Cola
1tspvanilla extract
1/4cupsour cream mixed with 3 tablespoons of sugar for topping
Country style cherries
24cupsmini muffinand mini muffin pan
optional: chocolate cups
Instructions
Crush cookies to a fine crumb and combine with melted butter
Line 24 mini muffin cups into pan
press aprox. 1 teaspoon of crumbs into the muffin cups (pack tightly)
refrigerate for 1hr
bring cola to a boil and mix with jello then cool for about 10 mins
Combine cream cheese,heavy cream and vanilla
Then whisk together the jello mix and the cream cheese mix until there are no lumps
Place batter into a plastic bag with a whole at the end or a squeeze bottle (using a spoon also works fine)
Fill cups about 2/3 the way
Regrigerate cups for at least 3 hrs - until set
Gently remove cheesecake from cups and garnish with a dollop of sour cream and a small piece of cherry.
Serve chilled
Notes
Optional: Using a squeeze bottle or plastic bag - put the cream cheese mixture into an edible chocolate cup refrigerate and garnish with sour cream and cherry when ready to serve.
