Easter Lamb Centerpiece

A fun twist on the traditional Italian Easter Cake

Ingredients
  

  • 8 cups Puffed rice cereal
  • 6 cups Mini marshmallows
  • 3 tbsp Butter or margarine
  • 1/4 tsp Almond flavoring
  • 1 Bag shredded coconut
  • 1 tbsp Water
  • Green food coloring
  • Black Jelly Beans
  • Colored Jelly Beans
  • 12 oz White Chocolate Candy Melt

Instructions
 

  • Preheat oven 350 degrees

For the Lamb

  • Heat puffed rice in a shallow baking pan for 10 minutes. Then add to a large greased mixing bowl.
  • Next, melt butter in a large saucepan over low heat, add almond extract and the marshmallows and stir constantly until smooth. *IT WILL BE STICKY THOUGH*
  • Now pour the marshmallow mixture over cereal and stir until coated evenly.
  • Grease both sides of the lamb mold before filling each half evenly. To prevent sticking, grease your hands as well. Snap your mold together and let set overnight.

For the grass

  • Put the shredded coconut in a bowl or even a jar (like a mason jar). Add water and the food coloring. MIx until all combined and all the coconut is the same color green.
  • *If using the jar method, place the same ingredients into a jar, seal and shake vigorously.
  • Place the coconut on your platter. Allow coconut to dry a bit before placing the lamb on the center of the cake dish/tray

For the Lamb's Face

  • Cut a black jelly bean in half and press in to make eyes. Also add a whole jelly bean for the nose (optional). Giving the lamb a llittl bow around the neck is optional but really cute!
  • Use remaining jelly beans to decorate around the lamb.
  • Optional Step:
    Melt 12 oz of candy melt. Coat the lamb with the chocolate. Decorate with jelly bean eyes and nose.

Notes

Use cooking spray to grease hands, bowl, and lamb mold. Tie a cute ribbon around the lamb's neck to decorate.
I let cook approx. 6 hours before removing from mold
