This puffed rice and marshmallow, Easter Lamb Centerpiece recipe pays homage to the Old World tradition of the Italian Torta di Agnello (Easter Lamb Cake). 


Rice Krispy Lamb


I don’t really know the history of the Italian Easter Lamb Centerpiece. But I do know it’s often used as a centerpiece on the Italian Easter table. 

When I was growing up, my mom used to make a fun version of the “torta di Agnello”, except it wasn’t a cake. It was a super-sized Rice Krispie treat!

Actually, it wasn’t until recently that I remembered the lamb.  Once I flashbacked to it, I hit my mom’s box of  “recipes” to see if she had it written down…

As luck would have it, she did! Actually, what I found was a very old newspaper clipping (circa 1972) sharing this unique version of an Italian Easter Lamb Cake. 

Fun right?! You should definitely give this one a try.

Easter Lamb Centerpice



Making this lamb cake is not hard at all. Like I said above, it’s basically one giant Rice Krispie treat molded into the shape of a little spring lamb. Actually, the mold does the molding, you just have to do the toasting, melting, mixing, and pouring. hehe.

Step 1 

The first step is to spread the puffed rice cereal out onto a sheet pan to toast in the oven for about 10 minutes. 

In the meantime, melt the butter in a saucepan with the almond extract and the marshmallows.


Step 2

Once toasted, place the cereal in a mixing bowl and then carefully pour the melted marshmallow mixture over it. Mix together until combined. It will get sticky 🙂

Step 3

Now grease the 3d cake pan on both sides. Then press the Rice Krispie mixture into each half of the mold. Once that is done press the two open sides together to form a full lamb. Keep the mold shut until completely cool and stuck together.

Overnight is best.


Easter Lamb with Coconut Grass

Step 4

Other than removing the lamb Rice Krispie cake from the mold, you will need to decorate the platter for your centerpiece.

To make the grass as seen in the picture above, take the shredded coconut and place it into a bowl. Now add a few drops of green food coloring with a tablespoon of water. Mix together until all the coconut is the same shade of green.

Remove the lamb when set, lay the coconut on a serving dish, and place it on top.

Now you can decorate the lamb with jelly bean eyes and nose.

I like to tie a pretty ribbon around the neckline for an added touch.

It brings back great memories of my childhood. I loved sharing this recipe with you, in honor of my Mom! She was a super woman that was way ahead of her time and was never afraid to break the “mold”.

While the original version of this lamb centerpiece is adorable as is, I recently updated the recipe. I’ve taken it to the next level by coating it in white “chocolate” candy melt. I am really glad I decided to take try this new step in the recipe because it truly enhances the visual appeal of this little lamb centerpiece.


Lamb Cake

Easter Lamb Centerpiece

A fun twist on the traditional Italian Easter Cake


  • 8 cups Puffed rice cereal
  • 6 cups Mini marshmallows
  • 3 tbsp Butter or margarine
  • 1/4 tsp Almond flavoring
  • 1 Bag shredded coconut
  • 1 tbsp Water
  • Green food coloring
  • Black Jelly Beans
  • Colored Jelly Beans
  • 12 oz White Chocolate Candy Melt


  • Preheat oven 350 degrees

For the Lamb

  • Heat puffed rice in a shallow baking pan for 10 minutes. Then add to a large greased mixing bowl.
  • Next, melt butter in a large saucepan over low heat, add almond extract and the marshmallows and stir constantly until smooth. *IT WILL BE STICKY THOUGH*
  • Now pour the marshmallow mixture over cereal and stir until coated evenly.
  • Grease both sides of the lamb mold before filling each half evenly. To prevent sticking, grease your hands as well. Snap your mold together and let set overnight.

For the grass

  • Put the shredded coconut in a bowl or even a jar (like a mason jar). Add water and the food coloring. MIx until all combined and all the coconut is the same color green.
  • *If using the jar method, place the same ingredients into a jar, seal and shake vigorously.
  • Place the coconut on your platter. Allow coconut to dry a bit before placing the lamb on the center of the cake dish/tray

For the Lamb's Face

  • Cut a black jelly bean in half and press in to make eyes. Also add a whole jelly bean for the nose (optional). Giving the lamb a llittl bow around the neck is optional but really cute!
  • Use remaining jelly beans to decorate around the lamb.
  • Optional Step:
    Melt 12 oz of candy melt. Coat the lamb with the chocolate. Decorate with jelly bean eyes and nose.


Use cooking spray to grease hands, bowl, and lamb mold. Tie a cute ribbon around the lamb's neck to decorate.
I let cook approx. 6 hours before removing from mold
