Nutella Cheesecake Bars

Ingredients
  

For the Cheesecake

  • 3 8 oz packages of cream cheese softened
  • 1 cup of sugar
  • 1 cup of nutella
  • 3 eggs
  • 1 tsp vanilla

For the base

  • 20 oreo cookies crushed
  • 1/2 stick butter

For the Fudge

  • 1 8 oz container of cool whip
  • 1 12 oz bag of semi sweet morsels

Instructions
 

  • Preheat oven to 350 degrees F
  • FOR THE BASE: Crush the oreo cookies to a fine crumb and add 1/2 tablespoon of melted butter and mix well. Then add dd the cookie crumbs to the brownie pan and lightly press down.

FOR THE CHEESECAKE

  • In a stand mixer beat the cream cheese, sugar and nutella until creamy (should take a few minutes). Add the vanilla and the eggs one at a time (mix in between each egg). When creamy pour into the brownie pan, tap gently. If your using a pre cut inserter then add that at this time. Place the pan in the oven (middle rack). Bake for 45 minutes or until done. Let the cake cool.

FOR THE TOPPING

  • Transfer 8oz of unthawed cool whip into a microwave safe glass bowl. Then add the chocolate chips. Melt in the microwave for 2 minutes. After the first minute stir the mixture well and then continue to cook. Let stand 15 minutes
  • Once cake is cooled remove the insert and pour the fudge over the top. Spread evenly with a knife. Reserve any extra chocolate for dipping strawberries or pretzels. Refrigerate the cake bars overnight. Remove from tray and cut through the fudge topping and enjoy.

Notes

Using a different size pan will alter the baking time so be sure to keep that in mind.
