Heat olive oil, butter, garlic and thyme in a large non stick skillet. Season chicken breasts and saute in the pan for 4 minutes each side on medium/high heat.
Add a splash of your favorite white wine and the lemon juice. Turn the heat down to medium and cook until chicken is cooked through. About 10-12 minutes. Turn the chicken a few times in the sauce while it simmers. Add extra thyme for garnish and serve warm.
Remember to Remove the garlic and thyme stems before serving.
Notes
You can omit the white wine and use stock and lemon zest for additional flavor.
