It’s almost May and you know what that means… SUMMER!
I can not wait for summertime picnics, beach parties and backyard BBQ’s. When this time of year rolls around I am ready to start bringing mealtime outside. I am also ready to start making some of my favorite summer foods, like the the quintessential Summer side, String Bean and Tomato Salad.

Eating vegetables and fruits is just so healthful by nature and when summer rolls around I really look forward to the abundance of homegrown fruits and vegetables because I know they are not loaded with chemicals and pesticides. My goal is to always cook with good quality foods that make mealtime both healthy and tasty.
That’s why I love a summer salads like string beans and tomatoes, it’s a simple summer side dish made with just a few seasonal ingredients. I think there is like 6 ingredients to this salad including tomatoes, string beans, sliced onions, and dried herbs. I even like to keep it organic right down to the olive oil and vinegar.
Lately, I have been enjoying this 100% Cento Extra Virgin Olive Oil that is made from selected organic olives and certified by the ICEA (an Italian organization that certifies organic farming). It makes the perfect addition to this fresh seasonal side.
So these are the things that make me happy: summer and good quality foods. Now let’s get this summer started by grabbing a cold one, firing up that grill and diving right into this yummy string bean and tomato salad.
