If you are looking for an easy, flavorful weeknight meal, add this Baked Chicken Caprese melt to your weekly menu rotation. Made with boneless chicken breast, fresh tomatoes and melted mozzarella, this dish has all the markings of a magical meal in minutes.
Some nights in the kitchen I’m literally channeling my inner Julia Child and other nights I’m scavenging through my refrigerator and pantry trying to pull dinner together like a contestant on Chopped. Several times a year I vow that I am going to meal plan my weekly menu and it’s usually a giant #fail . The fact that I am the world’s most efficient procrastinator does not help.
I actually think the reason I am such a good cook or at least have good cooking skills, is a direct result of my lack of preparedness mixed with my creativity. I literally spend more weeknights without a plan for dinner than I do with one, but I always manage to pull it together.
In an effort to stick to my weekly meal planning goals this year, I decided to try out a meal prep delivery system. I’ll be honest, even with this strong desire to be more prepared at mealtime, I was very reluctant to try out this type of service and went in with a very poor attitude. I almost felt like a sell out in a sense, but I really thought I needed to try it at least once.
After a little crowd sourcing on my social media I ordered my first Blue Apron kit thanks to my blogger friend Ashley of Big Flavors from a Tiny Kitchen. Still very skeptical, I signed up and chose the most Italian inspired dish I could find, a baked Chicken with Melted Mozzarella and Roasted Tomatoes. I eagerly waited for my shipment ….
About 5 days later my first box arrived and boy did my attitude change. Coming up with recipe ideas is kind of my thang but having everything pre measured and at my fingertips was literally like hitting the meal prep lottery. I grabbed the ingredients, recipe card and my kitchen utensils and a stress free, really tasty meal time was underway.
It’s been about 3 weeks now since I have been using this meal kit delivery service and I’ve found it to be an overall successful service. But you know what they say, old habits die hard, lol. More often than not, I find myself creating my own recipes out of the ingredients they send me. But it has undoubtedly helped me reduce the amount of time spent in the kitchen.
It’s also helped inspire some new recipes and innovative techniques to use in the kitchen, like this Baked Chicken Caprese Melt. One night while I was trying to get a last minute meal together, I thought about the baked tomato and mozzarella chicken recipe that came from my first meal kit. Even though I did not have all the ingredients on hand, I improvised with what I had on hand and voila, a new family favorite.

Baked Chicken Caprese Melt
Ingredients
- 2 Boneless Skinless Chicken Breasts
- 1/2 cup Cherry Tomatoes halved
- 1 Tsp Capers chopped
- 5 oz Fresh mozzarella cut up
- 1-2 Cloves garlic minced
- 1 Tbsp Dried Italian Seasoning
- Handful Fresh Basil
- S&P to taste
Instructions
- Pre heat Oven to 450 degrees F.
- Season both sides of chicken breasts with salt, pepper and Italian seasoning. Seat chicken on both sides in a skillet with 1-2 Tbsp. Olive oil. Cook chicken about 4 minutes per side. Set aside in a baking dish.
- In a bowl add tomatoes, chopped capers, drizzle of olive oil and a little fresh torn basil. Add mozzarella, gently toss and spread evenly over the chicken. Place in hot oven and bake for aprix. 20-25 minutes OR UNTIL CHICKEN IS COOKED THROUGH. Remove from oven and serve warm.
