I love grilling all year round, but spring and summer time grilling is just so nostalgic for me. It brings back so many memories of my dad and his 2 outdoor bbq’s filled with charred Italian sausages, hot dogs, chicken and lamb.  He loved being outside and grilling so much that he even constructed a wooden trellis over the bbq area so he could grill in any kind of weather.

The warmer weather has finally struck my neck of the woods and I couldn’t be happier! Spring is one of my most favorite times of year.  I love everything about spring, from the budding tulips, to the birds chirping and of course the warmth of the sun beating down on my face as I head out the door. Ohh, and let’s not forget one of my most favorite things to do in spring, and of course it involves food…… Grilling!   

Chicken with Garlic Lime Teriyaki

Grilled chicken is perfect cold over salad or even wrapped in your favorite tortilla or flatbread.   

I love grilling season, it’s quick, easy and allows me to cook twice as much at one time.   It’s especially helpful when cooking things like chicken breasts.  We eat a lot of chicken and especially in the warmer months. Using the grill for chicken is a great way to get 2 or 3 meals out of one prep. I like to marinate 2-3 pounds of chicken breasts at a time and then throw them all on the grill.  The chicken cooks fast and I use the extra for lunches and even the next night for dinner.  

Grilling is also really low maintenance in the clean up department and that right there is a winner.  I’m not sure about you, but I am all for anything that involves good food and easy clean up.

Grilled Chicken Garlic Lime Teriyaki

 When it comes to flavoring the chicken there are so many options. One great recipe I have is with this Garlic- Lime Teriyaki marinade.  This recipe came to me from an old Shop Rite clipping, which I think was like circa 1990’s-ish. I’ve actually tweaked the recipe a bit over time to give it my own twist and pizzaz.  All you need to do is place the chicken breasts into a large resealable plastic bag, mix the marinade and pour it in. Let the chicken sit in the refrigerator for at least 30  minutes and it’s ready to grill. This marinade will bring a lot of great flavor to the chicken in a short of amount of time.

Garlic LIme Teriyaki Chicken

Garlic-Lime Teriyaki Grilled Chicken

Grilled chicken breast in a garlic, lime and teriyaki sauce
Prep Time 30 minutes
Cook Time 10 minutes
Total Time 40 minutes

Ingredients
  

  • 4 Boneless Chicken Breast Halves
  • 3-4 cup Tblp.low sodium soy sauce
  • 2 Tbsp. Teriyaki
  • 1/4 cup fresh lime juice
  • 1/2 tsp dry mustard
  • 2 cloves garlic
  • 1/2 TSP ground pepper
  • Zest of 1 Lime
  • 1/4 cup Canola Oil
  • 2 Tbsp. Sugar

Instructions
 

  • Mix together soy sauce, teriyaki, oil, lime juice, lime zest,garlic, mustard, and sugar.  Place chicken in a self sealing bag and pour sauce inside and seal. Using your hands on the outside of the bag, coat the chicken with the marinade. Refrigerate for at least 30 minutes.
  • Pre-heat grill to medium/high heat.
  • Remove chicken from marinade and sprinkle with pepper. Discard marinade. Place chicken on the grill and cook 6 minutes each side until no longer pink inside and juices run clear.
  • *Use a meat thermometer to ensure your food is cooked through.

Notes

Alternatively:  Spray a nonstick frying pan with cooking spray and heat over medium temperature. Add chicken and cook about 6 minutes on each side or until meat is thoroughly cooked.
