Almost 6 years to the date, I am finally getting around to updating this post. My current situation is home with my fam in New York during the Covid-19 outbreak so I not only have some extra time on my hands, I also have a family that’s always hungry! I’m literally finding that if I am not homeschooling, I am cooking or cleaning something. I mostly shop online and haven’t really went outside the perimeter of my property for about 2 weeks now. I am doing my part to #stayhome but since I am a master at shopping my own pantry, we are eating well. 

This week I actually got a Costco delivery after hitting the Instacart lottery, Woo Hoo!! I mean I had been trying for days to get delivery and then one morning I woke up really early, checked my cart and bam, there it was a 5 day delivery window! Talk about lucky. I probably should’ve played the real lotto that day. Do they even still have lotto? OMG I don’t even know what is going on in the outside world anymore.  Anyway,I patiently waited (as if I had a choice) for my order to arrive some 4 days later, and some of my items were not in stock, some I thought I ordered and some I just duplicated by accident. As it turns out I over ordered  Cherry/Grape tomatoes. SMH. I have no idea how I even did that but I did. 

Spaghetti Cherry Tomatoes

So now here I am with a boat load of grape tomatoes in my pantry and so I thought what a perfect time to update this post with some new photos and content. As well as enjoy one of my favorite meals, Spaghetti Pomodorini (little tomatoes) Diavolo.  It also happens to be a great meal with simple, flavorful ingredients. Especially for those us who find ourselves not heading to the grocery store as frequent as we used to.  All you need for this one is pasta, I use spaghetti but you can swap in whatever you like, some tomatoes, olive oil, garlic (lots of garlic!) and pepper flakes. I happen to always have fresh basil on hand but dried basil or even oregano would work if you’re in a pinch. It’s really not going to get more basic than this.

Not only is this dish quick, it has only a few ingredients and isn’t difficult to make.  By keeping stock of certain items in my refrigerator and pantry, I usually have ingredients on hand to pull together a homemade meal.  In this dish I pulled out spaghetti, grape tomatoes, garlic, red pepper flakes and grated Parmesan cheese. These are all ingredients I keep on hand in my pantry and refrigerator. I think I’ve mentioned before that I try to keep cherry/grape tomatoes on hand because they are flavorful and very versatile.

This is one of my favorite meals… it’s quick, flavorful and simple to make.

Here’s what you need to do to make this delicious and quick meal. I’m certain you can pull this off in less than 30 minutes. Let me know what you think and how you like it when you give it a try.

  • 1/4 cup of reserved cooking liquid
  • Grated Parmesan Cheese to taste

Instructions
  1. Over Medium heat olive oil in a large sauté pan with crushed garlic and red pepper flakes. Once garlic begins to turn brown add grape tomatoes and sauté another 5 minutes. Salt and pepper to taste. Cover pan for remaining 10 minutes or until tomatoes have softened.You can press on them slightly with a potato masher or a fork to help them release their juices. Add fresh parsley or basil and toss through the mixture.
  2. Cook the pasta according to package directions in plenty of salted water.
  3. Drain pasta - reserving a cup of the cooking water. Pour the pasta into the sauté pan and coat through the tomato and oil mixture. If to dry add a tablespoon at a time of the reserved water until the desired consistency is reached.
  4. Transfer to a serving platter and garnish with plenty of grated parmesan cheese.
Recipe Notes

Salting the pasta not only gives the pasta flavor but it also adds flavor to the water that you need to add to the dish.
