Broccoli Slaw with Greek Yogurt

broccoli slaw 1Broccoli slaw with Greek yogurt is one of my favorite  sides for summer.  It’s not only a quick summer salad, it tastes better the next day (so preparing in advance is a plus).  Boasting all of the health benefits of broccoli, this slaw is high in antioxidants ( vitamins A and C) and contains fiber. You also eat this raw which I think is an added health benefit.  


This is a great alternative to regular cabbage slaw.  I purchase a 12 oz bag in the produce section of the market.  The eat smart brand that I like  already contains shredded carrots and red cabbage.   I don’t know if i mentioned this before, but I really do not like mayonnaise!  Whenever I can substitute Greek yogurt I do.  I try to keep my slaw dressing simple and sugar free.  I add some Craisins to the broccoli slaw to  give  a little tangy sweetness.   You could also substitute agave syrup for sugar.  

The preparation  was straight forward, make the dressing first, then add it to the slaw, mix it all together until it is well coated. Cover and then refrigerate over night.  I modified the dressing recipe I found on my package for a traditional slaw salad.  I liked the “eat smart” brand.  Check out the Eat Smart website to find out where it is sold and some other great recipe ideas.

 We  sometimes enjoy our broccoli slaw with Chili Cheese Dogs, I like the balance of the textures and the combination of the spiciness in the chili with the creaminess of the slaw.

Broccoli Slaw Greek Yogurt

Broccoli Slaw with Greek Yogurt

Ingredients
  

  • 12 oz bag of broccoli slaw
  • 1/2 cup of plain greek yogurt
  • 1/4 teaspoon dry mustard
  • 1-2 tablespoons vinegar white or apple cider
  • 1 cup of craisins
  • 1/4 tsp pepper
  • 2 tablespoons of extra virgin olive oil
  • Garlic Salt to taste

Instructions
 

  • Combine broccoli slaw and craisins in a bowl and set aside. Then,In a bowl, whisk together the yogurt, olive oil, vinegar, mustard,garlic salt and pepper.Pour this over the slaw and mix to combine. Taste for seasoning Cover and refrigerate over night.

Notes

Optional: Add 1 cup sliced almonds
Add 2 tsp sugar
