If you’re looking for a simple, tasty and dare I even say healthy side dish, then this Whole Wheat Lemon Parsley Couscous is definitely worth a try. You will love this dish because it is not only quick and easy to make, but it only has a few ingredients.  All the ingredients in this dish are wholesome and follow a heart healthy diet.  With this recipe you get good tasting food that is actually good for you.     


Although couscous is actually a pasta, compared to some grains it is packed with some really great benefits.  From the start whole wheat couscous is good for you because it  has absolutely no saturated fat and is low in cholesterol. Whole wheat couscous also has a low glycemic index, which will not spike insulin levels like other pastas.  Moreover, it has a good amount of protein and fiber which helps you stay fuller longer.  This means a little couscous will go a long way.   Actually whole wheat couscous has more fiber and protein than brown rice. 

Trader Joe's Whole Wheat Couscous

While I do not endorse any particular brand, I personally prefer the Trader Joe’s Whole wheat couscous. One of the reasons I really like this brand is because for about $2.00 you get  8 servings of uncooked couscous. I would say 1 cup of uncooked couscous will yield about 3-4 servings as a side dish. I think that is a great deal.  

The ingredients needed to make this simple side are: whole wheat couscous; the juice and the zest from one fresh lemon, some fresh chopped parsley, chicken stock (or even plain water) and a little extra virgin olive oil. 

Trader Joes Whole Wheat Couscous

Using a 1:1 liquid to couscous ratio bring your liquid, lemon juice and extra virgin olive oil to a boil and then remove from the heat.  Pour in the couscous, give a good stir and cover for about 5 minutes.  Remove the lid and add the lemon zest and parsley and then fluff with a fork.  Serve as a simple side dish with your favorite meat or fish.

In my opinion this whole wheat couscous is the perfect addition to your weeknight meal. With 6 simple ingredients you get a healthy and tasty side dish that doesn’t cost a lot in time or money.  I hope I’ve given you some great reasons to give this dish a try….

Lemon Parsley Couscous

Simple Couscous with lemon and parsley

Ingredients
  

  • 1 cup low sodium chicken broth
  • 1 tablespoon fresh lemon juice
  • 1 tablespoon olive oil
  • 1 tablespoon fresh parsley
  • 3/4 cup of dry couscous
  • 3 tsp lemon zest

Instructions
 

  • Bring broth, lemon juice and oil to a boil in a saucepan. Take off the heat and stir in the couscous; cover and let stand 5 minutes. Fluff couscous with a fork, add parsley and lemon zest, and season with salt.

Notes

Substitute water for chicken stock for a vegan friendly meal.
