Today I wanted to share one of my favorite meals – Spaghetti Arrabiata with Grape Tomatoes. More often than not, this spicy spaghetti is a go to meal when I am short on time.  I especially enjoy this on a Friday night with some homemade pizza and a glass of red wine.  Although I like to keep it spicy in the kitchen, I don’t like to add too much heat in this dish because my little ones eat it too. I find just a pinch of red pepper flakes is enough to give it that necessary kick. If you need a little more heat to spice things up then just add an extra pinch or two 🙂

Not only is this dish quick, it has only a few ingredients and isn’t difficult to make.  By keeping stock of certain items in my refrigerator and pantry, I usually have ingredients on hand to pull together a homemade meal.  In this dish I pulled out spaghetti, grape tomatoes, garlic, red pepper flakes and grated Parmesan cheese. These are all ingredients I keep on hand in my pantry and refrigerator. I think I’ve mentioned before that I try to keep cherry/grape tomatoes on hand because they are flavorful and very versatile.

  • 4-6 cloves of peeled crushed garlic
  • pinch of red pepper flakes
  • fresh parsley or basil
  • 1 cup of reserved cooking liquid
  • Grated Parmesan Cheese to taste

Instructions
  1. Over Medium heat olive oil in a large sauté pan with crushed garlic and red pepper flakes. Once garlic begins to turn brown add grape tomatoes and sauté another 5 minutes. Salt and pepper to taste. Cover pan for remaining 10 minutes or until tomatoes have softened.You can press on them slightly with a potato masher or a fork to help them release their juices. Add fresh parsley or basil and toss through the mixture.
  2. Cook the pasta according to package directions in plenty of salted water.
  3. Drain pasta - reserving a cup of the cooking water. Pour the pasta into the sauté pan and coat through the tomato and oil mixture. If to dry add 1/4 cup at a time the the reserved water until the desired consistency is reached.
  4. Transfer to a serving platter and garnish with plenty of grated parmesan cheese.
Recipe Notes

Salting the pasta not only gives the pasta flavor but it also adds flavor to the water that you need to add to the dish.
