If you like it then you better put an #EggOnIt …. on your pizza that is

Have you tried eggs on pizza yet? No? Perhaps you are like me and have been a bit hesitant because you haven’t been eggsactly sure how it would work out.  Well I am here to tell you it’ll work out and you SHOULD try this at home.  Let me start by saying this Breakfast Pizza recipe is very simple to make with just a few sunny side eggs cracked up on top. I know your family will love it, mine did!

As you guys know I sometimes go basic in my recipe approach because I am faced with some very picky eaters in my household (well let’s call it what it is  …. THEE pickiest eater ever – my husband). He is painstakingly hard to feed.  But with that said, even he went gaga over this.  Truth be told, I think going a bit basic with a first time breakfast pizza isn’t such a terrible idea. It’s actually a good start and how I came to make this pizza to begin with.

Often times on the weekend I make these great plans to cook up new foods and recipe test. More often than not, I just don’t get around to it.  <Enter my Breakfast pizza story here>

Yesterday in my grocery travels , I bought some pizza dough with intentions to recreate and write a pizza recipe I had shared socially during the week.  I let the dough sit out for hours (as I normally do), thinking at some point in the afternoon I would get around to writing this other recipe.  As it turned out, the dough sat on the counter ALL day and ALL night.  Hating to see the dough go to waste, at about 9:30 pm my husband said “what are you going to do with that pizza dough”?”.  I thought for a minute and said “you know what I’ll just pop into the oven with some basic tomato sauce and then cook it up tomorrow with some cheese.” And that’s just what I did. I baked it, let it cool and refrigerated it for the next day.

With every intention to just add some mozzarella to it I woke up the next morning to my family asking “what’s for breakfast”?  I thought a few moments and just like that had one of those light bulb moments… breakfast pizza?? YES, yes that’s what I am going to do… I am going to take this basic pizza, bake it and then crack some eggs on it.  It was a perfect last minute idea! Just like that I preheated the oven,  put the pizza on a baking sheet did my thing and VOILA-  Sunny Side Up Breakfast Pizza. 

I drizzled a little basil oil over the top but you could go all out with this pizza by adding shredded arugula, bacon bits, or even prosciutto di parma. The options are endless and up to you. For my family this basic pizza with a little yolk on top was a great start.  

That’s the story of my first ever breakfast pizza.   • 1 lb Pizza Dough bakery/pizzeria style
  • 1/4 cup basisc San marzano tomato sauce
  • 8 oz shredded mozzarella low moisture
  • 1/4 cup Parmesan cheese grated
  • 3-4 large eggs
  • basil oil 1/4 cup olive oil and 3 Tblsp. fresh basil leaves pureed in the blender

Instructions
  1. Preheat oven to 425 F. Allow dough rise in a lightly oiled bowl for one hour under plastic wrap (on the counter)
  2. Lightly grease a large baking sheet with olive oil. Stretch out pizza dough to meet the edges of the pan. Evenly as possible. Sprinkle some grated cheese over the dough and then add the fresh tomato sauce. Cover the pizza with the sauce (do not saturate!). Place in the oven on the bottom rack for 15 minutes.
  3. Remove pan from the oven; evenly spread the grated mozarella chees over the pizza and place back into the oven on the bottom rack for 10 minutes or just until cheese starts to melt.
  4. Again remove the pizza from the oven. Crack 3 to 4 eggs over the pizza with the yolk in tact. Spread out the eggs as much as possible. Return to the oven and continue to bake on the top rack until the cheese becomes bubbly and the eggs set. Remove from oven and drizzle with basil oil and sprinkle any remaining grated parmesan cheese. Serve warm.
