Today is National Cordon Bleu Day.  Who doesn’t love a good stuffed chicken? I know I do!

In the spirit of this chicken dish I am sharing my favorite “chicken rollatini” recipe.  It’s stuffed with ham and muenster cheese (well technically it’s rolled but you get the idea.)

This is one of the first recipes I ever mastered.  It is somewhat involved but with the right assembly line you can “roll” these out no problem 🙂

Chicken Rollatini

Rolled chicken breast stuffed with ham and muenster cheese

Ingredients
  

  • 10 very thin chicken cutlet breasts
  • 10 slices of boiled ham
  • 10 slices of muenster cheese
  • 1 cups to 2of flour to coat chicken
  • 4 eggs scrambled
  • Handful of grated parmesan cheese
  • 1 1/4 olive oil
  • 1 tablesppon butter optional
  • 1 small package of button mushrooms
  • 1 jar of chicken or turkey gravy

Instructions
 

  • Pre heat oven to 350 degrees F

For the mushrooms

  • Clean and slice mushrooms
  • Quickly sauté mushrooms - using just a tablespoon or so of oil - until golden
  • Put aside when cooked

For the Chicken

  • ***The key here is to have all your ingredients in place and ready to go. You need an assembly line. Line up your chicken breasts, ham, cheese, flour, and egg wash. ***

Egg Wash: Scramble the eggs with a few tablespoons of water and parmesan cheese

  • Wash and dry chicken; season to taste (salt, pepper,etc..)
  • Layer one slice of ham and then cheese; roll up the chicken - trying to tuck in any of the ham or cheese spilling from the sides.
  • Heat up 1/4 cup oil and butter in a fry pan; season your flour with salt and pepper.
  • Dip chicken into flour then in egg wash and then sear in hot oil.
  • Sear each side until golden brown. (Try and move the chicken a bit to see if it's ready to flip - if it sticks its probably too soon). Drain chicken on a plate with paper towel then add to baking dish
  • Pour the chicken gravy all over the chicken;then add the mushrooms
  • Cover with aluminum foil and bake until chicken is cooked through. Approximately 1 hour.
  • The gravy will come to a boil and the cheese may ooze out a little - that's when you know it's close to done!

Notes

I like to bake in the middle rack if possible
Optional: During the last 20 minutes of baking remove foil to crisp the top of the chicken.
