Creamy Avocado Pesto Dressing

I wanted to change up my typical tomato and cucumber salad so decided to take my favorite pesto sauce and combine it with vinegar and mashed avocado. It made this creamy dressing that was delightfully refreshing.  I really love the creamy avocado combined with the bite from the pesto.  To make it more of a dressing I added some lemon juice and red wine vinegar.
I decided to dice up the tomatoes, cucumber, and red onion, then toss it together with the avocado dressing.


It was the perfect topping on my grilled skirt steak.

I really LOVE this for grilling season.

Alternatively, you could cut your tomatoes and cucumbers into wedges and slice your red onion and then add a few tablespoons of the avocado pesto dressing and serve on the side as a salad.

You could also use this as a straight up garnish on steak, chicken, fish, steamed vegetables or as dressing for salads. I am also planning to try this on a grilled Portobello mushroom.  However you decide to use this, I don’t think you can go wrong.

I kinda threw this together but here’s what I did…feel free to adjust the  flavors as you see fit.

Creamy Avocado Pesto Dressing

Mashed Avocado, combined with pesto and vinegar to make a creamy pesto dressing for salads, meats, fish, or vegetables.
Prep Time 15 minutes
Total Time 15 minutes

Ingredients
  

  • 2 ripe avocado
  • 3-4 tablespoons of pesto
  • Juice from 1 lemon
  • 1/4 cup of red wine vinegar
  • Salt and pepper to taste

Instructions
 

  • Cut and remove the avocado from its casing and place into blender/chopper
  • Add the remaining ingredients and pulse until creamy but not too thick.
  • You can add a little more vinegar too thin out
  • Serve as a dressing with you favorite salad, meats, fish or vegetables.
  • Use remaining dressing within 3 days to keep freshness

Notes

Makes about a 1 cup
If you need to make a quick pesto take equal parts of basil,parsley,oil and grated Parmesan (or Romano) cheese, clove of garlic and place in blender or chopper and mix together then add in olive oil. I also have 2 pesto recipes under sauces.
