Like most people who grew up in an Italian family I learned how to make certain dishes via the watch and learn method. Then when I got married it became the trial and error method.  It usually took a few tries (like 99 or so) to even get the so-called recipe right.   


One of the dishes that took me many years to perfect was pizza/focaccia. You name the scenario and it happened to me: burnt, undercooked, doughy, soggy, etc…  I think that just about covers it.  Although now I’ve just about perfected the art of pizza and focaccia making, I still get a twinge of anxiety on pizza night and always let out a sigh of relief when its cooked well.

Wether or not you suffer from the post traumatic stresses of homemade pizza making (yes thats the clinical diagnosis!) like me or your just intimidated to try it out I have the answer!   It’s called Flatout Bread. It’s a tasty flatbread I recently came across in my local Stop & Shop.  I spotted the package at the deli counter because it said “makes super easy and amazing pizza”, and I’m all about super easy amazing pizza. Who isn’t right?  I must admit I was skeptical, but bought it anyway. It came in a few different flavors, but knowing my picky family I went with the Original.

I got home and had to try it out.  Let me just say “run don’t walk to your nearest grocery store and give this a try!” It’s a delicious product that made an easy – stress free pizza! I used my ingredients (minus my usual pizza dough) for broccoli pizza. I figured if I was gonna test it out I would go with  something top heavy to see if the bread would hold up and it did!

Other than having great flavor, the thing that makes this flatbread great for pizza is that it’s not too flat to hold up to the heavier toppings.  I liked baking it up on both sides and found it held up to the heavier topping better.  I must say I love homemade pizza, but I really did love this and will definitely use it again.  

Just a few tips:

  • I used frozen broccoli florets, defrosted, warmed them through and cut them small enough to allow for oven roasting in a short period of time.
  • Make sure the oven is hot – very important – adjust temperatures as all ovens cook differently.
  • Make sure your broccoli is not soggy and over saturated … this will make it difficult to properly roast the broccoli

I do have 2 other recipes I tried with this flatbread and will share them as soon as I can get them up.

Flatbread Broccoli Pizza

Flatout Broccoli Pizza

Broccoli Pizza made with flat-out bread.
Prep Time 5 minutes
Cook Time 10 minutes
Total Time 15 minutes

Ingredients
  

  • 1 piece of Flatout bread
  • 1 cup of finely chopped frozen broccoli florets thawed
  • 1 clove chopped garllic
  • 2 tablespoons of Extra Virgin Olive Oil
  • Handful Grated Parmesan Cheese
  • Handful Shredded Mozzarella Cheese
  • Pinch of garlic Salt to taste

Instructions
 

  • Pre heat oven to 400 degrees F
  • Warm through chopped broccoli florets (20-25 secs. in microwave will do). Add the chopped garlic, olive oil, and garlic salt to the broccoli and mix well.
  • Place the flat-out bread onto a cookie sheet and place on bottom rack for 2 minutes. Carefully remove the pan, flip over the bread and place back into the oven on the top rack for an additional 2 minutes.
  • Carefully remove pan from oven and spread the broccoli mixture evenly over bread. Sprinkle with parmesan cheese and then mozzarella.
  • Place back into the oven on the top rack for 5 minutes or until the cheese is melted and the edges are crisp.
  • Remove and set aside for a few moments before cutting. Serve and enjoy!

Notes

This yields about 8 flat bread pizza squares.
