Garlic Scapes Seasoning Puree Recipe

If you've taken a trip to your local Farmer's Market this spring you may have come across these long, curly green stalks. On a recent trip I exuberantly pointed out what I thought were long Italian String Beans, but the Farmer's Market Veggie expert pointed out to me that they were actually, Garlic Scapes. 

"Garlic Scapes?" I said in my most surprised, inquisitive voice. "Yes" she said, followed by a quick informative explanation of what they were:    

  • GARLIC SCAPES ARE THE LONG FLOWERING STEM THAT GROWS OUT OF THE CENTER OF THE GARLIC BULB.
  • THESE EDIBLE STEMS ARE CUT A FEW WEEKS BEFORE THE GARLIC IS READY, TO ENCOURAGE GROWTH
  • THEY TASTE JUST LIKE GARLIC BUT HAVE A SLIGHTLY MORE SUBTLE FLAVOR
  • THEY ARE OFTEN FOUND AT FARMER'S MARKET DURING JUNE THROUGH MID-JULY

A whole new world of garlic

WOW. I felt like I had been exposed to a whole new world of garlic.  It's amazing how you can think you know things but in reality, life is always teaching us something new. I was so excited to get home with these little beauties and start using them.

But how?    

Since scapes are garlic, basically... I decided to preserve the scapes by mixing them together with some extra virgin olive oil, basil, parsley and sea salt. I placed it all into my mini chopper , pureed it all up and then stored into an airtight container in the refrigerator.  Kind of like I do with my Mama's Green Sauce recipe at the end of summer.  Eastchester Farmer's Market

I've been adding dollops of this Garlic Scapes Puree as seasonings to just about everything: sauces, veggies and marinades. I'm actually hoping I'll be able to swap this into my Gemelli Pasta and Shredded Zucchini with Green Sauce recipe.  

I'm so glad I was able to share all about these garlic scapes with you. We all a big thank you to the farmer from Deep Roots Farm  for explaining them to me.  Next time you are at the Farmer's Market, don't be afraid to say her Mr./Mrs. Farmer ... what's that and what can I do with it?  Try something new, different and IN SEASON.  Trust me there will be plenty of Google Search results for recipe ideas and suggestions.

Garlic Scapes Seasoning Puree

Garlic Scapes preserve made with scapes, olive oil, parsley and basil.

Ingredients
  

  • 1 cup Garlic Scapes chopped (aprox. 8 scapes)
  • ½ cup Extra Virgin Olive Oil
  • ¼ cup Flat Itallian Parlsey
  • ¼ cup Italian Basil
  • ½ teaspoon Sea Salt

Instructions
 

  • Chop the scapes from the bulb up to ¾ of the stalk. Add the scapes and remaining ingredients to the blender and chop until a puree/paste forms. Preserve in a glass/plastic container and use as seasoning when cooking.

Notes

Lasts up to 3 weeks in the refrigerator
