London Broil and Peppers

London Broil Leftovers with peppers 1

I hate to see leftover food not get used .  One of my favorite leftover meals is when I have a good amount of steak/meat leftover.. I like to prepare it with sauteed peppers in olive oil and a touch of tomato sauce. I like this combination because it's quick and it's a flavorful way to prepare leftover meats without drying them out.  

I used leftover London Broil in this post but this method would work with chicken, pork or even sausage.  

I made this leftover london broil (serving of about 10 ozs) with about a cup of sliced mini bell pepper.

I was able to  feed 1 hungry man and 1 hungry man in training!  

I sliced the peppers crosswise into rings. *I  use mini bell peppers in many dishes because I love how they cook and taste.  If you want to stretch it out even further add some additional peppers or other vegetable.  I use peppers because they are full of flavor.

The key to  re heating this meat is to add it at the end to prevent it from drying  out.  I like to saute the peppers first in olive oil.  When the peppers are browned and soft I like to add the meat and then the sauce.  I continue to cook it  some more for no more than 5 minutes (or until warmed through).

 My family made sandwiches out of this leftover favorite but you could also serve it with rice, pasta ,quinoa or your favorite salad.
