Peaches with Whipped Greek Yogurt and Crushed Amaretti

It’s no big surprise that I LOVE food and with that comes a love for dessert.  And with a love for dessert comes the panic stricken thoughts of :

A moment on the lips,  a lifetime on the hips  

While I like to indulge in sweets every now again it’s hard to enjoy them when all I can think is how my moment of sweet indulgence will affect my derriere.  Somehow I don’t think I’m alone on this one….  

If you feel guilt ridden about desserts like me (and even if you don’t), I’ve got a homemade indulgent dessert that will fit into everyone’s bottom line. Feed that sweet tooth craving with this simple Peach and Whipped Greek Yogurt dessert. It tastes so good and it really isn’t bad!  It’s made with fresh peaches and non fat vanilla Greek yogurt that is whipped with a touch of heavy cream, and then topped with a sprinkle of crushed Amaretti cookies.  I love using Amaretti cookies because they are gluten free and add a great layer of flavor that pair well with this peaches and cream style dessert.

To make this recipe all you need is a fresh peach or two that have been peeled, pitted and diced. If you have other fresh fruit that you would like to add to this that will work just as well.  I recently made this dessert with peaches and strawberries.

The next thing you need to do is to whip up a touch of heavy cream with a little confectioners sugar with your hand mixer. When you reach soft peaks add some non fat vanilla greek yogurt and continue whipping until the peaks begin to stiffen.  You could also ship the cream to stiff peaks and fold in the greek yogurt. TIP: Straining the greek yogurt ahead of time helps with the whipping and gives the topping a fluffier whipped look. Either way the taste is the same. You can easily satisfy your sweet tooth with just a teaspoon of whipped yogurt cream.

Next you’ll need to take 1 or 2 of your favorite cookies, I like to use amaretti cookies. Crush the cookies in a self sealing plastic bag.  Place the fruit in a small cup or bowl and then add a dollop of the greek yogurt topping, and top off with a sprinkle of the cookies.  

Greek yogurt is high in protein which help smetobalize the This makes the perfect sweet, creamy and crunchy dessert that will make you think you should feel guilty for eating it, but truth is, this dessert is not bad for you or your boo-tay!

Peaches with whipped greek yogurt and crushed amaretti

Servings 4

Ingredients
  

  • 2 peach
  • 6/7 oz container of Greek Yogurt
  • 1/8 cup of Confectionary Sugar
  • 2-3 crushed amaretti cookies
  • 4 oz of heavy cream
  • oz Optional: 8of fresh quartered strawberries or other fresh fruit

Instructions
 

  • Peel, pit and rough chop peaches (cut any additional fruit up as well).
  • Place 2-3 amaretti cookies in a self sealing plastic bag and crush them with the palm of your hand or a rolling pin.
  • Pour cream into a chilled bowl and beat on high until soft peaks form. Add the confectioners sugar and beat until stiff peaks are formed. Fold the yogurt in with a spatula.
  • Divide cut up peach in half. In a small cup layer a teaspoon of peaches, then a dollop of yogurt cream, then crushed amaretti, and repeat ending with crushed amaretti on top.
