Crockpot Spaghetti Squash with a touch of Pomodoro Sauce
As you know, I really do love my slow cookers. Yep that’s meant to be plural cause’ I shamelessly own 3. I use them all year round and not just for braised meats and stews. I use them for rice, baked potatoes, Pizza and of course squash. I love that you can use it to just set and forget many oven type dishes during summer without having to heat your kitchen.
For the spaghetti squash I prefer to use the wider, larger capacity pot, like this 6 quart slow cooker from Crockpot….
I Just cut the squash in half vertically, clean out the seeds,etc.., then season with salt, pepper, and olive oil before placing it into the cooker. Oh and don’t forget to add a few tablespoons of water to the bottom of the pot before letting it sit and do its thing for . It should take about 3- 3 1/2 hours on high.
This dish is perfect all year round but I really love making it during summer because while you are enjoying a little fun in the sun the squash can be slowly cooking and is ready to serve when you get home. It’s also the best time of year because you can just grab some of those garden fresh tomatoes to make the quick and flavorful Pomodoro Sauce. I also add touch of my green sauce for an extra burst of that fresh, summer basil flavor.
