Fresh Blueberry Fennel Salad
Salad with fennel, blueberry, cucumber, pineapple, orzo pasta and sesame seeds.
- 1 1/2 cups fresh Blueberries
- 1/2 cup chopped cucumber
- 1/2 cup diced fresh pineapple
- 1/2 cup very thinly sliced fresh fennel 1 small bulb
- 2 cups cooked orzo pasta cooled
- 1 1/2 teaspoons rice vinegar
- 1 teaspoon toasted sesame oil
- 1 teaspoon toasted sesame seeds
- Salt and pepper to taste
- Combine all ingredients in a large bowl
- Optional: Add Chopped chicken and fresh salad greens
Tip: Use Whole grain orzo
