I’ve been curious to see how pancakes mix in a mini muffin pan would turn out …
and so,
this morning, I gave it a whirl!
I know making homemade pancake is simple but since this started out as a test recipe I opted to use a boxed mix I keep in the pantry(Krusteez). I made two separate batches, the first batch was with maple syrup and bacon. It was good but still needs a little tweaking. The second batch was with mini chocolate chips. I prefered the chocolate chips version, so this is the one I am posting. I ‘m pretty sure I will also to try a banana and walnut version.
I feel like there are many possibilities on this one, so be creative. I really loved this idea because I feel like it’s a unique way to serve pancakes. Especially, at a brunch or on a brunch buffet table.
I made the smallest serving size on the package directions. I prepared the mix per the directions, then added vanilla extract, sugar and chocolate chips. I felt like the batter needed an addition of sugar even with the chocolate chips.
I then coated the mini muffin pan(s) heavily with cooking spray (i used the spray with flour/butter for baking). I filled each pan full but think that a little less would have been better. I was working fast and forgot to tap the pans and the mini muffin pancakes looked a little lopsided so “do” give them a tap before baking them in a pre-heated oven of 350 degrees F.
After about 12 minutes, when the tops looked lightly browned, I removed them from the oven. I inserted a toothpick into the center of the thickest muffin and it came out clean so I knew they were done!
I plated them and served to the kids – they LOVED them!
I did not put any toppings but I would maybe sprinkle with a little powder sugar when cool..
