Are you feeling a little glum this Monday? I actually woke up feeling a little down, because summer is almost over and the weather here in New York is changing a bit. It’s not that I dislike fall, but I just feel the cooler weather has set in a little too early. It’s actually been bringing me down a little. If you are feeling down like me, here’s a little Nutella Kiss therapy to brighten up your day. The combination of the Hershey’s kiss and Nutella are guaranteed to turn any frown upside down! Let’s be honest, even if you aren’t feeling glum, do you really need an excuse to try anything with Nutella?!
This recipe is a take on the classic peanut butter blossom but with everyone;s favorite hazelnut spread, Nutella. I also changed up the original recipe by leaving out regular sugar and using dark chocolate kisses instead of milk chocolate kisses.
NUTELLA KISSES
INGREDIENTS:
1 Bag Hershey’s Kisses – I prefer Dark Chocolate
1/2 cup shortening
3/4 cups Nutella
1/3 cup light brown sugar
1 egg
2 tblsp milk
1 tsp vanilla extract
1 1/2 cups flour
1 tsp baking powder
1/2 tsp salt
1/4 cup or so granulated sugar
PROCEDURE:
Pre-heat oven to 350 degrees F (325 F on convection)
In a large mixing bowl beat nutella and shortening until well blended
Add brown sugar and beat until light and fluffy.
Then add the egg, milk and vanilla and continue to mix well
Onto a piece of parchment or wax paper sift together flour, baking soda, and salt.
Gently and carefully fold the edges of the wax paper together and gradually pour into the bowl with Nutella mixture.
Then shape dough into 1″ ball. In a separate bowl with about 1 cup of granulated sugar. Roll each ball into the sugar and place on an ungreased cookie sheet. While the cookies are baking begin unwrapping the hershey kisses from the wrapper and place in a bowl.
Place pan in oven and bake for 10-12 minutes. Remove from oven when cooked and place a chocolate kiss into the center of each cookie, pressing down until the cookie cracks around the edges. Transfer to a cookie rack and cool completely
Serving Size: 48
TIPS AND TRICKS:
- I prefer the dark chocolate kisses but you can use any flavor of choice
- Try and keep the nutella cookie balls as close to 1″ as possible. If you don’t keep them at 1″ they won’t stay puffed up like you see in the picture. If to big they will spread and be flat.
