How about another quick and easy chicken dinner recipe to add to your weekly menu? I think at some point or another we are all looking for a new simple flavorful chicken dinner. For many reasons chicken has definitely become the go to meat of choice these days. Studies show that in recent years Americans are actually eating chicken more than beef and globally chicken is the 2nd most popular protein. That’s a lot of chicken dinners!
In terms of making a quick weeknight dinner, what is a better go to protein than thinly sliced chicken breasts? I mean it tastes good and if eaten without the skin, it’s a lean, low fat heart healthy protein containing a lot of essential vitamins. Personally, I love boneless, skinless chicken breasts because they are healthy, versatile and cook quickly.
In most cases when you cook with thin chicken breasts you can almost always have a quick, healthy-ish dinner on the table in less than 30 minutes. This lemon, wine and thyme chicken recipe is one of those dishes. It has just a few ingredients and can definitely be put on the table in just over 20 minutes. That’s a low fat, heart healthy meal on the table in under a half hour – you definitely got “thyme” for that! I hope you enjoy it …
Here’s the rundown….
The main ingredients in this dish are thin chicken breasts, lemon juice, white wine, garlic, and thyme. You’ll also a need a little olive oil, an optional pat of butter and some salt and pepper to taste.
To get started heat up the olive oil, butter, thyme, and garlic in a large saute pan over medium/high heat. Season your thin boneless chicken breasts with salt and pepper. Once the pan is hot and the butter is melted add the chicken breasts. Cook chicken for 3-4 minutes per side. Then add your lemon juice and a splash of white wine. Now you will want to lower the heat to medium and continue to cook the breasts until they are done for about 10-12 minutes. Turn the chicken over in the pan during this time to allow the chicken to absorb the flavors of the sauce.
Add some more fresh thyme to the pan at the very end and swirl around. Remove the garlic and thyme stems and serve the chicken with the juice. This would be great with a side of asparagus or over pasta, rice, couscous, etc…
No fail and #yummy! Just make sure to keep your pan on medium heat and to really pound out those chicken breasts to get em’ nice and thin.

Quick Lemon, Wine, and Thyme Chicken Breasts
Ingredients
- 4 VERY thin boneless skinless chicken breasts
- 2 cloves crushed garlic
- 1 tablespoon olive oil
- 2 tablespoons of unsalted butter
- 2 sprigs of fresh thyme - plus extra to garnish
- 1/4 cup of lemon juice
- Splash of White Wine your choice
- Salt & Pepper to taste
Instructions
- Heat olive oil, butter, garlic and thyme in a large non stick skillet. Season chicken breasts and saute in the pan for 4 minutes each side on medium/high heat.
- Add a splash of your favorite white wine and the lemon juice. Turn the heat down to medium and cook until chicken is cooked through. About 10-12 minutes. Turn the chicken a few times in the sauce while it simmers. Add extra thyme for garnish and serve warm.
- Remember to Remove the garlic and thyme stems before serving.
