Do you love to watch the Big Games but find yourself short on time to prepare a game day feast?  That’s me too! There never seems to be enough time on the clock for this busy mom. That’s why I am always looking to create simple recipes that fit into even the busiest of days, like these Sausage Pizza Roll Ups.  This no bake pizza roll is made in a skillet using a large tortilla that’s topped with tomato sauce, cheese, and sausage filling. It’s then rolled up, sliced into pinwheels and ready to eat in no time. Best part… #NoHailMaryNeeded to get this dish on the table for the BIG game!

Key Players

Like any important game, the players make the team. In this case it’s the ingredients.  One of the key ingredients in this simple recipe is the sausage, but more importantly the brand of sausage.  Premio is usually my first pick.  With their light, all natural seasoning and local butcher quality cuts of meat, Premio has been making deliciously tasting Italian Sausages for over 40 years.  In addition to Italian sausages, Premio also offers a variety of other ethnic sausages, as well as both chicken and turkey sausage products. The Play by Play

Get ready to sit back and enjoy the game because you are not going to believe how quick and simple these pizza wrap roll ups are! In just under 25 minutes with one skillet and your stovetop, you will have the the most simple, flavorful and IMPRESSIVE game day dish to serve to your fam/guests.

To start you’ll need a large skillet.  I use a 10″ non stick skillet that can be wiped down for easy clean up. The first part of the recipe takes up the bulk of the time needed to prepare these pizza roll ups. You’ll need to begin with cooking the sausage. I prefer to remove it from the casing, saute it until cooked cooked through and then saute the mushrooms and vinegar peppers. Vinegar peppers are good for these roll ups because they add a quick, tangy flavor to the pizza and do not need a lot of time in the pan. In the final stages of sauteing I like to combine all the ingredients to marry the flavors together before setting the filling aside in a bowl.

Now just wipe out your non stick skillet and get ready to build that wrap and roll.  The process goes fast and you’ll need to be quick too. It literally will take minutes to warm the tortilla, spread with tomato sauce and to melt some shredded mozzarella cheese. Once that cheese is melted scoop a portion of the sausage filling onto the tortilla. Warm through another minute and then slide out of the pan onto a wooden pizza paddle or board.

Here’s where you’ll need to move quick. Let the wrap cool for a few seconds and quickly roll up as tightly as possible. Please NOTE that the wrap might be HOT while rolling.  The key is to roll it quickly so the tortilla doesn’t get too hard and begin to crack.  Once rolled, let the pizza wrap stand about 5 minutes and then cut into halves, quarters or pinwheels.

Simple Game Day Sausage Pizza Roll Ups

Sausage Pizza Roll Ups made with tortillas, Premio Italian Sausage, mushrooms and peppers.
Course Main Dish

Ingredients
  

  • 4 Premio Italian Sausages removed from casings
  • 8 oz Mushrooms sliced
  • 1/2 cup sliced Vinegar peppers
  • S&P
  • 2-3 10" Flour tortillas
  • 1/2 cup basic tomato sauce
  • 1/2 cup shredded mozzarella cheese
  • Grated Parmesan Cheese
  • chopped parlsey

Instructions
 

  • Saute Sausage in Skillet until cooked through. Remove from Skillet and Set aside
  • Saute Mushrooms until lightly golden brown. Season with s&P and add Vinegar peppers. Continue to cook a few minutes and then return Sausage to the pan. Add chopped parsley and mix well. Combine and again transfer back to bowl.
  • Turn heat down to low, Take 1 burrito and lay inside the Skillet spread 2 T sauce all of over, leaving a border around the edges. Sprinkle oregano and then a sprinkle  of grated cheese, and mozzarella cheese. Allow to set before spreading 1/3rd of the mixture. Let sit and then remove and roll up quickly. Let stand a few minutes and then slice into desired size.
