Hey guys! As promised… some magical meals made WITHOUT the stove!
The dog days of summer are upon us and I hope these stove free recipes help keep you and your kitchen cool! I really worked hard on these for you guys cause’ you guys deserve more than the usual crockpot pulled pork. From fancy poached eggs in the toaster oven to bonus flatbread french toast cannoli roll ups on the electric griddle this week’s menu has some great stoveless meals.
Oh and I certainly can not forget the amazing Pesto Prosciutto Panini recipe from my friend Michelle, the blogger behind “Mangia Michelle” .

Toaster Oven Eggs in Purgatory : These poached eggs in tomato sauce are topped with cheese and take about 15-20 minutes in the toaster oven. Oh and do NOT forget the bread!
Chicken with Roasted Red Pepper Mascarpone Sauce: This dish was created when we lost gas to our home stove and was born in an electric skillet borrowed from my friend, Deb!
My take on the classic Mozzarella in Carozza is this egg battered Zucchini with Fontina Cheese sandwiched in between. If you LOVE Zucchini and Cheese then you’ll love this Zucchini in Carozza

Dijon Baked Flounder Filet with Asparagus :The Toaster Oven is in it for the win this week … make this ENTIRE meal using only your toaster oven!
