French n Toasty

IMG_3745 Usually when we are in the local donut shop my son begs me for a French Toast Egg sandwich. I almost always say "NO!" But this morning, with two Aunt Jemima French toast left in the freezer and Grilled Cheese Day on my mind, I decided to give him a little breakfast treat.  I made it in a hurry and probably would do a few things differently in the future but I thought I would share with you. 

I can tell you that it made my boy very happy...even if it wasn't completely homemade. Even a though I would say it was a little soggy- he didn't even leave a bite for me!

Here's what I did... you may have some better tips or suggestions (which I would love to hear on my facebook page CHEFTINI)

I first popped the French toast in the microwave for about 30 seconds to slightly defrost...

Cracked two eggs in a hot pan brushed with oil

Added a splash of milk and scrambled them up (season to taste)

NOTE: Since my French toast was frozen next time I will toast both pieces of  French toast in the pan prior to adding the egg and cheese .

Removed from the pan and then brushed pan with a little more butter (I used smart balance) and began toasting the bread then added the egg

I flipped the sandwich over then I put a little foil and a pot on top to create a press and cooked just a few minutes until brown

 Voila! Not super fancy but it was pretty yummy!
