I hoped to have this recipe up last week but had a bit of planning to do as we prepared to celebrate a very special occasion.
With that said…
Here’s a tasty chicken dish with peppers and tomatoes in a lemon-wine sauce (sort of a like a mediterranean stir fry). Serve this with brown rice or whole grain orzo (Tip: cooked in stock or bouillon for added flavor)
…without further ado here’s the quick and easy recipe card:
Chicken and Peppers with Lemon-Wine Sauce
Quick and flavorful chicken dish with peppers in a lemony, white wine sauce
Ingredients
- 3-4 chicken breasts sliced into strips
- 6 mini sweet peppers sliced into rings
- 1/4 of a medium white/yellow onion sliced
- 3-4 tablespoons of olive oil
- 1/4 cup of diced tomatoes - drained
- 1/3 cup of chicken stock
- 1/3 cup of white wine
- 1 whole lemon squeezed for juice
- handful of chopped fresh parsley
Instructions
- Heat 2-3 tablespoons of olive oil in a sauté pan
- Add peppers and onions and cook on medium heat for 5 minutes
- remove from pan and set aside
- Add another tablespoon or so of olive oil and add seasoned chicken (such as season-all seasoning)
- Saute chicken on medium heat until brown on both sides
- Return peppers and onions back to pan and continue to sauté a few more minutes
- Add tomatoes and parsley and combine
- while continuing to cook on medium heat add white wine, half lemon juice and all chicken broth
- Immediately cover the pan and continue to cook partially covered for a another 5 minutes or until the chicken is thourughly cooked.
- Remoe lid turn heat up slightly when sizzling add add the remaining lemon juice give a sti and transfer to a serving dish
- serve over rice or orzo pasta
