Lemon Chicken and Peppers

IMG_3516I hoped to have this recipe up last week but had a bit of  planning to do as we prepared to celebrate a very special occasion. 

With that said...  

Here's  a tasty chicken dish with peppers and tomatoes in a lemon-wine sauce (sort of a like a mediterranean stir fry).  Serve this with brown rice or whole grain orzo (Tip: cooked in stock or bouillon for added flavor)

First, sauté the peppers and onions

Then, I sauté the chicken

Return peppers and onions and add the tomatoes and liquids until done

...without further ado here's the quick and easy recipe card:

 

Chicken and Peppers with Lemon-Wine Sauce

Quick and flavorful chicken dish with peppers in a lemony, white wine sauce

Ingredients
  

  • 3-4 chicken breasts sliced into strips
  • 6 mini sweet peppers sliced into rings
  • ¼ of a medium white/yellow onion sliced
  • 3-4 tablespoons of olive oil
  • ¼ cup of diced tomatoes - drained
  • ⅓ cup of chicken stock
  • ⅓ cup of white wine
  • 1 whole lemon squeezed for juice
  • handful of chopped fresh parsley

Instructions
 

  • Heat 2-3 tablespoons of olive oil in a sauté pan
  • Add peppers and onions and cook on medium heat for 5 minutes
  • remove from pan and set aside
  • Add another tablespoon or so of olive oil and add seasoned chicken (such as season-all seasoning)
  • Saute chicken on medium heat until brown on both sides
  • Return peppers and onions back to pan and continue to sauté a few more minutes
  • Add tomatoes and parsley and combine
  • while continuing to cook on medium heat add white wine, half lemon juice and all chicken broth
  • Immediately cover the pan and continue to cook partially covered for a another 5 minutes or until the chicken is thourughly cooked.
  • Remoe lid turn heat up slightly when sizzling add add the remaining lemon juice give a sti and transfer to a serving dish
  • serve over rice or orzo pasta
