Raise your hands if you’re ready for a new recipe to marinate your chicken. Grilling season is just about upon us and like your wardrobe, sometimes your favorite grilled foods need a little pick me up. Even if your usual favorites have done you good, it’s always nice to add a few new options into the mix. A change. A food makeover if you will. This is how I feel about my usual grilled chicken recipes, I like them, they taste good but they could definitely use a new accent of flavor this year.
Well, if you’re like me and think you’re chicken can use some new threads or even just an accent or two, then I have the recipe for you. It’s a simple Roasted Red Pepper marinade that will definitely give your chicken a much needed pick me up. It’s a really flavorful sauce that you can make like “1-2-3”.
Besides a few basic ingredients you will need a jar of roasted red peppers. Roasted red peppers in a jar are sweet, but they are also stored in an acidic brine that together help make a quick and flavorful marinade. The brine helps flavor the chicken quicker and the peppers add a nice roasted yet sweet touch. I prefer to buy basic roasted peppers and then add my own additional seasonings. Since all brands of roasted peppers are not created equal, you may need to adjust some of the acids in the recipe.
To make this marinade/sauce all you do is MIX the roasted peppers and other ingredients into the blender, then pour it over the chicken breasts to marinate (refrigerate), and after about 2-3 hours it is ready to grill. See 3 easy steps: (1) Mix (2) Marinate (3)Grill

Roasted Red Pepper Marinade
- 8 Thin Boneless Chicken Breasts
- Juice from 2 lemons
- 12 oz jar Roasted Red Peppers with Juice
- 2 clove garlic
- 1/4 cup T EVOO
- 2 T White Vinegar
- 1 cup Fresh Basil
- 1/2 cup flat leaf parsley
- 2 t garlic salt
- Pepper to taste
- Combine Peppers,basil, parsley, garlic, oil and seasonings into the blender and puree.
- Pour 1/2 of the mixture over the chicken breasts and marinate in the refrigerator for a few hours.
- Grill 15-20 minutes or until no longer pink inside.
- Reserve remaining sauce for garnish or future use.
