As promised, a new weekly menu for your busy work week! The What’s for Dinner weekly menu is designed to give you mealtime inspiration. Simple, easy meals that helps you feed yourself, your partner or, your whole family.
This week’s menu is definitely more fall inspired with some of my favorite recipes, instant pot cauliflower soup, stuffed peppers and I even threw in a meatless #TacoTuesday!
MONDAY
Instant Pot Cauliflower Soup
This soup can be made stovetop but I love how quickly it comes together in my electric pressure cooker. Besides an Instant Pot, all you need to make this rich and creamy Cauliflower Soup are a few basic ingredients and about 20 minutes of your time.

Vegetable Bean Tostada
If you love #TacoTuesday but are looking for a meat free option, then this tostada recipe is for you. This is kind of a one skillet meal, since that’s all you’ll need to get this quick, easy recipe on the table.

Gemelli Pasta with Shredded Zucchini
This is such a great recipe when you want pasta but not a traditional red sauce. It’s super easy to make because the green sauce is just some fresh garlic, herbs and olive oil whipped up in your blender . This one is sure to wake up all your senses! Stuffed peppers are definitely a fall and winter favorite. This one is going to take a little more than a few minutes, but it is so worth it! Comfort food all the way.

BONUS RECIPE
This week’s bonus recipe is an Italian American classic, Potatoes, Peppers and Eggs – A.K.A Frittata. This is a go to meal on our house, usually on a friday. Serve it with Pizza, soup or alone with some nice Italian Bread and Mozzarella Cheese. YUM!I I recommend using like an 8″ non stick skillet for this recipe, that’s what I use. It’s easier to flip and stuff.
DESSERT RECIPE
There’s so many great dessert recipes to share with y’all this week, but I’m going with the $250 Urban Cookie Legend recipe. It’s been trending this month on my pinterest and the blog.
